Cherry chocolate oatmeal with cherry compote.

When a friend brought over some cherries, I just had to transform them into a delicious breakfast the next morning.
So I made cherry chocolate oatmeal topped with a delicious cherry chia compote. Cherry- heaven it was. The cherry chocolate combination was simply divine!

Cherry Chocolate Oatmeal

Ingredients (1p):

  • 1 cup rice milk
  • 1 cup pitted and halved cherries
  • 40g oats
  • 1 tbsp. chia seeds
  • 1 tbsp agave syrup
  • a pinch of Himalayan salt
  • 1/2 tsp. cinammon
  • 1/2 tsp. maca powder
  • 1/2 tsp. lucuma powder
  • 1/4 tsp. vanilla powder

Method:

  • Place the milk and the cherries in a bowl and bring to boil.
  • Turn down the heat and let simmer for 10 minutes to soften the cherries.
  • Add the oats and cook for another 5  minutes.
  • Add the remaining ingredients, give it a good stir and cook for a few minutes until you become a creamy consistency.

Cherry chia compote.

Ingredients:

  • 3 cups pitted and halved cherries
  • a pinch of Himalayan salt
  • 1 tsp cinammon
  • juice and grated peel of halve a lemon
  • 1 tbsp. agave syrup
  • 50 ml fresh cherry juice
  • 1 tbsp grinded chia seeds (I use a coffee grinder to grind the seeds to powder)

Method:

  • Put the cherries and the cherry juice in a kettle and bring to a boil.
  • Cook for a quarter of an hour at medium high temperature and stir frequently.
  • Add the remaining ingredients and cook for another ten minutes until the cherries are soft and the compote is thickened.
  • Taste and add some extra agave syrup if necessary.
